Here are some essential tips for brewing a good cup of coffee, as shared by Mr. Ichiro Sekiguchi (the founder of CAFÉ DE L’AMBRE).
・It is better to use a smaller amount of hot water in the coffee pot so you can better control the pouring angle to adjust the amount of hot water.
・Remove the boiling water from the heat and let sit for a while to allow the hot water to settle. Preheat the cups with the excess hot water. ・When brewing, place the coffee grains in the flannel filter, making a small indentation in the center, and pour each drop of hot water in a circular motion, starting from the center and gradually forming in a clockwise motion. (Like the shape of the letter “の” in Japanese Hiragana).
・Be careful not to have hot water directly in contact with the flannel filter. Wait for the coffee grains to foam and expand. (Be careful as no expansion indicates stale coffee beans). After sufficient steaming time, when it begins to drip drop by drop from the bottom of the filter, the extract preparation process is complete.
